Frugal Recipe: Mini Chocolate Peanut Butter Cups

These frugal sweet treats are the perfect solution to boredom on a rainy day. They’re quick and easy to make, and it only costs 11p per cup! This low-cost recipe makes 48 mini chocolate peanut butter cups, so there’s plenty to go around for your friends, family, and neighbours. (Who am I kidding? They were all for me.) Ingredients

  • 250g/1 ½ cups milk chocolate (65p)
  • 200g/1 cup smooth peanut butter (85p)
  • 200g/1 ¾ cups icing sugar (69p)
  • 50g/4 tablespoons unsalted butter (£1.49)
  • 50g/1 ¼ cup light muscovado sugar (£1.62)

Equipment

  • Teaspoon
  • Mixing bowl
  • Saucepan
  • Small heatproof bowl
  • Baking tray
  • 48 petit-four cases

Method

Using your hands, mix the muscovado sugar, icing sugar, butter and peanut butter in a large bowl until it feels like a paste.

Break the chocolate into pieces and melt in a heatproof bowl over a pan of simmering water. Stir and allow to stand for a minute, then place 48 petit-four cases on a baking tray and spoon in just enough chocolate to cover the bottom of each one.

With your hands, make small balls with the peanut butter mixture and place them gently into the cases, pressing down on the mixture just a little to form the middle layer of the cup.

Use a teaspoon to cover the peanut butter with enough chocolate that the top is flat. Here’s a tip: if you find tiny lumps or air bubbles in the top layer of chocolate, try gently moving the petit-four case in a circular motion. This movement should make the chocolate nice and smooth.

Decorate your peanut butter cups however you like! You could use silver balls, sprinkles, gold stars, edible glitter, or even miniature fondant decorations. If you don’t have any decorations, that’s okay, too – they’re just as tasty when they’re plain.

Finally, put your frugal treats in the fridge and allow the cups to set for half an hour.
